Classic Potato Salad


Classic potato salad is one of my summer staples, I just love it. It's so simple to make, cost effective and filling.

What you need:

5 pounds red potatoes, peeled
6 eggs
2 cups mayonnaise
1 onion, diced   
1 small green bell pepper, seeded and
diced
1 can black olives, drained
1 jar spanish olives, drained
3 stalks celery, thinly sliced
paprika
salt and pepper to taste 

What you do:

1. Bring a large pot of water to a boil. Add potatoes, and cook for 15 to 20 minutes, or until tender but still firm. Drain, cool and cut into cubes.

2. Place eggs in a pot and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.


3. In a large bowl, combine chopped potatoes and eggs. Mix together mayonnaise, chopped onion, green pepper, black olives, spanish olives and celery. Season with salt and pepper, mix well. Sprinkle with paprika and cover, and refrigerate for several hours or overnight.

Serve.
